Join us in the heart of the French Quarter for an CULINARY VACATION that you will never forget! Our local New Orleans Chef Greg Picolo will be instructing a 3 day cooking course that is a hands-on learning experience.
August 24th - 26th, 2007
Day 1 - Start your classes by enjoying an evening Cocktail Making Session with an expert mixologist, brewing up New Orleans cocktails, and learning about New Orleans food. The menu features: Oysters en Brochette, Crawfish Remoulade en Croute, Rosemary Scented Grilled Eggplant & Goat Cheese Roulades, Prune Rumaki, Crabment & Avocado Ravigotte/Gaufrettes, Frog Legs with Tabasco Glaze, Grilled Pork Tender Medallions, Yam Croute, Pepper Jelly.
The Cocktails to be featured: Sazerac, Ramos Gin Fizz, Hurricane, Pimms Cup, and Mint Julep.
Day 2 - Chef Greg will inspire you with his Nouvelle Orleans Cuisine that gives the New Orleans Traditional cuisine a modern twist. After class, enjoy a guided tour of the French Quarter and experience the New Orleans rich culture. This class’s menu features: Creole Style Alligator Sausage, Louisiana Crawfish, Okra Gumbo, Panned Catfish and Spinach Salad with Creole Vinaigrette, Grill Shrimp “Creole”, Pecan Roasted Yam Risotto, Bread Pudding with White Chocolate Sauce.
Day 3 - For the last day, cook and indulge in a New Orleans Style Brunch with a traditional Brandy Milk Punch. The menu features: Mimosas, Brandy Milk Punch, Oyster Soup, BLT Salad with Maytag Blue Cheese Vinaigrette, Cheddar Cheese Grits and Frog Leg Grillades, Pain Perdu with berries and Grand Marnier Chantilly.
All students will receive recipes for the menus prepared and a certificate of completion. The culinary experience includes accommodations, breakfast, food, and wine with cooking instruction. Prices begin at $1200 per person single occupancy or $1700 double occupancy ($850 per person). Classes are limited to 8 students.
